In the light of the climate changes which consider one of the most serious environmental challenges face the world which basically threat the food security cactus pear presented as a suitable alternative crop due to its ability to adapt with the new climate changes and at the same time, meet the growing interest of consumers in nutritional and healthy diets. Hydro-thermo mechanical process of DIC (détente instantanée controlée) or the drop instantaneous controlled pressure is an innovative process developed to improve the quality of the dried product and increase the efficiency of energy consumption. This innovative process can be used successfully for the production of high quality and crispy dried cactus pear peel snacks.
